Assam Tea

The tea: Assam tea, a type of black tea is derived from India’s indigenous, wild-growing tea plant variety, Camillia sinensis assamica and hails from India’s largest tea producing region, Assam. The state’s tropical weather characterized by hot and humid with lots of rain produces large tea bushes with abundant leaves. The resulting processed leaf has a strong, full-bodied and malty flavour. Assam tea leaves are generally harvested twice during a season. The first flush is picked during the early spring harvest in March and produces the more delicate teas coming out of Assam. The second flush in mid-summer produces the “tippy” teas considered to be the most distinctive of the Assam teas. These more mature, tippy leaves (more coppery in color and covered with fine, delicate hair) brew into a creamy, full-bodied, and brisk cup of tea.

Brewing: 2 gm of tea in 250 ml of water at 90-95 deg °C with a steeping time of 2-3 minutes. Assam tea stands up well with milk and sugar and is often used in breakfast tea blends popular across the world.
