Cold Tea Cold Tea

Iced Tea or Cold Tea is becoming increasingly popular these days because of its refreshing taste, heightened aroma and uncomplicated brewing method. Few also feel that it’s the best way to enjoy a wide range of teas. Cold brews have been shown to have lower levels of caffeine, reduced bitterness and less astringency as compared to hot teas. The brewing techniques are explained as below.

 

Cold brewing without hot water – Add two heaped tablespoons of loose leaf tea of your choice to 32 oz. (900 ml) of filtered water in a mason jar or a pitcher. You may add sugar or honey at this stage and then refrigerate it for a minimum of 3 hrs. to 6 hrs.

The tea can be infused with condiments like mint, ginger, lemon, apples, strawberries or cucumber for desired aroma. Strain the tea leaves and serve it straight over ice.

 

Cold brewing with hot water -  Add 2/3 tablespoon of loose leaf along with sugar. Pour hot water between 80 °C/175 °F (for White, Green & Oolong Tea) and 96 °C/205 °F (for Black & Herbal Tea). Steep the tea for 2-5 min or longer in case you prefer a stronger taste. Strain the tea and refrigerate it for an hour and serve it over ice. This method comes handy when you are in a hurry because brewing time is cut down with the addition of hot water.
